Joshua Kopel (General Manager, Co-Owner)

Joshua is an American entrepreneur, restaurateur and environmental advocate. Born in Baton Rouge, Louisiana, the spawn of bootleggers and retail giants, he was bred for the hospitality industry. Throughout Kopel’s 20+ year career in food and beverage he has managed venues ranging from the Alligator Bayou Bar, located on Alligator Bayou Road, seated on Alligator Bayou (it was exactly how you’re picturing it in your mind) to the hottest Hollywood nightclubs, bars, and ultra-lounges (far less glamourous than you’re picturing it in your mind). Kopel went independent in 2010 opening his first concept Five0Four, a New Orleans-inspired bar, on the Walk of Fame in the heart of Hollywood. Four years later, his sophomore effort, Preux & Proper, opened cementing his role as an arbitrator of taste in all things Southern within the confines of the city of Los Angeles.

Kopel’s varied interests and talents have landed him several positions of influence ranging from being voted one of the Steamiest Southern Stars by E! Entertainment Television to the elected position of Business Chair on the Hollywood Hills West Neighborhood Council to founding and serving on the Board of Directors of the Friends of Runyon Canyon, a non-profit focused on the protection of local Los Angeles Park areas. 

Sammy Monsour (Executive Chef)

Sammy is a third generation chef, cookbook author and food activist. You may recognize him from the numerous network’s he’s appeared on such as “Food Network,” “Travel Channel” and “Hallmark,” to name a few. He is a graduate of the “Culinary Institute of America” and 20 year veteran of the professional kitchen, with roots stemming from his parent’s neighborhood joint in Chapel Hill, North Carolina. His passion for sustainability, application of modern technique and devotion to cooking with soul are staples throughout his interpretation of regional American cuisine. His cooking has received acknowledgment and acclaim from many great American food institutions, including “James Beard Foundation,” “Food Network,” “American Culinary Federation” and “Zagat.” 

Sammy currently resides in Downtown Los Angeles where he is the Executive Chef of Preux & Proper, Chefs Collaborative LA Locals Leader and member of the “Monterey Bay Aquarium Seafood Watch” Blue Ribbon Task Force.

Kassady Wiggins (Bar Manager)

Victoria Lane (Manager)

Victoria Lane entered the world of hospitality being recruited by Disneyland as one of Orange County's most accomplished High School Grads. She started out in a hot dog stand at a cash register getting crushed by parade rushes and in seven years had worked up to the equivalent of a restaurant manager.

Victoria became particularly enthralled with DTLA during the building of LA Live. She spent two years at Trader Vic's immersed in the fascinating world of Tiki Culture. Her belief in what DTLA could be culturally solidified and she pointedly sought out opportunities within the community.  In recent years, Victoria spent time working alongside Ricardo Zarate at Mochica and Michael Hung at Faith & Flower then Viviane.

As a member of the Preux & Proper's team, Victoria is taking on the role of manager for the first time since the Mouse House after having spent several years as a Maître D'. She is also the point person within the restaurant for Monterey Bay Aquarium's Seafood Watch Team, a cause that is very close to her heart.

When Victoria isn’t sharing her love of fine dining with DTLA, she can be found producing magical nightlife events.

Sean Beckner-Carmitchel (Wine Director)

Sean is a Certified Sommelier, French Wine Scholar and 17 year veteran of the Food & Beverage industry (despite his baby face). In addition to developing the wine list for Preux & Proper, he is currently the Wine Buyer for Buzz Wine & Beer Shop. He has worked on or is currently developing the wine program for The Garland Hotel in Studio City, Birch in Hollywood, Estrella in West Hollywood, Indulge Wine Rooms in Milwaukee, WI as well as others.

He or his lists have been mentioned in the Milwaukee Journal Sentinel, the Los Angeles Times, Organic Living Magazine and several other publications.

He believes full-bore in sustainability, a welcoming and food-first approach towards wine and an approachable wine list that serves its guests first.

Sean's favorite wine term is Trockenbeerenauslase and his favorite grape is Sangiovese. He lives in Hollywood with his two cats, Copernicus and Lilia and he is a proud member of the Cinefamily.
